My broadcaster/partner Orville Susong recently had the opportunity to speak with Central Brevard Sharing Center President and CEO David Brubaker. You could see and hear in his voice how excited he is for the competition. Brubaker told Susong that after Friday's captain's meeting at 6 p.m., the teams “will be sent to their locations to begin the BBQ miracle they are performing!” Beef brisket, pork brisket and chicken are the three categories chosen by the officials judged by jurors and the public.

Cooking takes place overnight. The public will be allowed to enter the park at 11 a.m. Saturday. After that, it's time to eat!
